Milk Is the main ingredient in cheesemaking. And lots of it. The fresher the better.
I thought getting a goat and milking it twice a day was going to be enough milk for us to DRINK., turns out its way more than a person could drink in a day. Ha! Now that's a LOT of milk. I was bringing a gallon of milk in at a time - twice a day! 2 GALLONS a DAY! So much for a glass of milk with dinner....
I had to find something to do with all this milk. And quick. I started researching and finding recipes for cheese and started playing. I threw a lot of milk away. Well, cheese wanna be's. Nothing turned out.
I started making my own recipes - because nobody else's recipes worked.
But soon I had something we called cheese. And it was good! That was the start of the cheese trail. Now I make several different kinds. I have even played with some different Herbs and seasonings in it. I've ventured into yogurt, kefir, sour cream, and cottage cheese. How fun and so versatile.
